Ingredients
- 2 large sweet potatoes
- 1 ½ pounds chicken breast (cut into cubes)
- 2 cups cauliflower rice
- 1 whole lemon (cut into discs)
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon minced garlic
- 2 teaspoons paprika
- ½ teaspoon cumin
- ¼ teaspoon chili powder
- ½ teaspoon lemon pepper seasoning
- ¼ teaspoon pepper
- 1 batch red pepper sauce
- 2 cups steamed or sautéed veggies of choice
Instructions
- Preheat oven to 425°F (220°C). Cube sweet potatoes and toss with olive oil, salt, garlic powder, and paprika. Spread on a baking sheet.
- Roast sweet potatoes for 25-30 minutes until tender and crispy.
- In a skillet over medium heat, heat olive oil and sauté minced garlic for 30 seconds. Add chicken and seasonings; cook for 8-10 minutes until golden brown.
- In another pan, sauté cauliflower rice until tender (5-7 minutes).
- Assemble bowls with cauliflower rice as the base, topped with roasted sweet potatoes, chicken, steamed veggies, lemon slices, and red pepper sauce.
