  • 2 cups cauliflower rice
  • 1 whole lemon (cut into discs)

  • ½ teaspoon paprika
  • 1 tablespoon minced garlic
  • 2 teaspoons paprika
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • ½ teaspoon lemon pepper seasoning
  • ¼ teaspoon pepper
  • 1 batch red pepper sauce
  • 2 cups steamed or sautéed veggies of choice

Instructions

  1. Preheat oven to 425°F (220°C). Cube sweet potatoes and toss with olive oil, salt, garlic powder, and paprika. Spread on a baking sheet.
  2. Roast sweet potatoes for 25-30 minutes until tender and crispy.
  3. In a skillet over medium heat, heat olive oil and sauté minced garlic for 30 seconds. Add chicken and seasonings; cook for 8-10 minutes until golden brown.
  4. In another pan, sauté cauliflower rice until tender (5-7 minutes).
  5. Assemble bowls with cauliflower rice as the base, topped with roasted sweet potatoes, chicken, steamed veggies, lemon slices, and red pepper sauce.
