- 1 cup cornmeal
- 1 cup all-purpose flour (or gluten-free blend)
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1/4 cup honey
- 1 cup buttermilk
- 2 eggs
Instructions
- Preheat oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix melted butter, honey, buttermilk, and eggs until smooth.
- Combine wet and dry mixtures gently until just mixed; do not overmix.
- Spoon batter into muffin cups about 3/4 full.
- Bake for 12-15 minutes until golden brown; test with a toothpick.
- Cool slightly before serving.
