  • 1 tsp. fresh cracked pepper, divided
  • 1 tsp. oregano, divided
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika, divided
  • 8 oz. turkey strips
  • 2 Tbsp. extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat oven to 350°F (175°C). Season chicken thighs with salt, pepper, oregano, garlic powder, and paprika.
  2. In a sauté pan over medium heat, cook turkey strips for about 3 minutes; remove and set aside.
  3. Sear seasoned chicken thighs in olive oil for 1-2 minutes on each side until golden brown.
  4. Sauté chopped shallots in the same pan for about 2 minutes; add grated garlic and cook briefly.
  5. Deglaze the pan with chicken broth and simmer for 3 minutes.
  6. Stir in butter and honey until melted; return chicken to the pan and add thyme.
  7. Bake covered for 15 minutes; top with sliced peaches and broil for an additional 3-5 minutes until soft.
  8. Garnish with fresh herbs before serving.
