Ingredients
- 2 tsp. sea salt, divided
- 1 tsp. fresh cracked pepper, divided
- 1 tsp. oregano, divided
- 1 tsp. garlic powder
- 1/2 tsp. paprika, divided
- 8 oz. turkey strips
- 2 Tbsp. extra virgin olive oil
- 6 chicken thighs
- 1 large shallot
- 3 cloves garlic, grated or pressed
- 1 cup chicken broth
- 1 stick of butter
- 1/2 cup honey
- 4 sprigs fresh thyme
- 2 large peaches, sliced
- Fresh basil and additional fresh thyme for topping
Instructions
- Preheat oven to 350°F (175°C). Season chicken thighs with salt, pepper, oregano, garlic powder, and paprika.
- In a sauté pan over medium heat, cook turkey strips for about 3 minutes; remove and set aside.
- Sear seasoned chicken thighs in olive oil for 1-2 minutes on each side until golden brown.
- Sauté chopped shallots in the same pan for about 2 minutes; add grated garlic and cook briefly.
- Deglaze the pan with chicken broth and simmer for 3 minutes.
- Stir in butter and honey until melted; return chicken to the pan and add thyme.
- Bake covered for 15 minutes; top with sliced peaches and broil for an additional 3-5 minutes until soft.
- Garnish with fresh herbs before serving.
