- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 2 tablespoons honey
- 1 teaspoon hot sauce (to taste)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup sliced red onions
- 1/2 cup chopped bell peppers (any color)
- Fresh cilantro (for garnish)
Instructions
- In a bowl, mix shredded chicken with BBQ sauce, honey, and hot sauce until well coated.
- Heat olive oil in a skillet over medium heat; sauté onions and bell peppers until soft (about 5 minutes). Season with salt and pepper.
- Lay a tortilla flat, sprinkle half with cheddar and mozzarella cheese. Add BBQ chicken mixture and sautéed veggies; fold over.
- Cook on a preheated skillet for about 3 minutes per side or until golden brown and crispy.
- Let cool slightly before slicing into wedges. Serve warm with optional sour cream or guacamole.
