- 1/2 cup unsalted butter, melted
- 1 cup old-fashioned oats
- 1 cup plus 2 tablespoons all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon molasses (or honey)
- 1/2 cup powdered sugar
- Whole milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8 x 8 inch baking pan with parchment paper.
- Melt butter and let cool slightly. Pulse oats in a food processor until coarsely chopped.
- In a bowl, whisk together pulsed oats, flour, baking soda, cinnamon, and salt.
- In another bowl, mix melted butter with both sugars until combined, then add egg, vanilla, and molasses.
- Gently fold dry ingredients into wet ingredients until just mixed.
- Pour the batter into the prepared pan and bake for 20 to 24 minutes or until golden brown.
- Let bars cool before icing with a mixture of powdered sugar and milk.
