- 6 strips turkey bacon (chopped)

Instructions
- Preheat your oven to 375°F.
- In a skillet, cook the chopped turkey bacon over medium heat until crispy. Remove and set aside, keeping the fat in the skillet.
- Sauté diced potatoes in the same skillet until golden brown and crisp.
- In a bowl, whisk together eggs and heavy cream, seasoning with salt and pepper.
- Pour egg mixture over the potatoes; top with cooked turkey bacon and cheese.
- Cook on stovetop for about three minutes before transferring to the oven.
- Bake for 15-20 minutes until set and puffed up.
- Garnish with fresh chives before serving.
