- 1 cup granulated sugar
- 8 oz melted dark chocolate (60%-72% cocoa)
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup fresh raspberries
Instructions
- Preheat your oven to 350°F (175°C). Combine crushed chocolate cookies and melted butter in a bowl and press into the bottom of a springform pan.
- In another bowl, beat cream cheese and granulated sugar until smooth. Gradually add melted dark chocolate and vanilla extract.
- Incorporate eggs one at a time, mixing minimally to avoid cracks. Gently fold in fresh raspberries.
- Pour filling over crust and bake for about 60 minutes until edges are set but center is slightly wobbly.
- Allow cheesecake to cool before refrigerating for at least four hours or overnight.
