- 6 large eggs
- 4 strips turkey bacon, cooked and crumbled (or plant-based alternative)
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon sugar
- Pinch of salt
- Pinch of black pepper
- Smoked paprika (for garnish)
- Fresh chives (optional)
Instructions
- Boil the Eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil.
- Let Them Sit: Remove from heat, cover, and let sit for 10-12 minutes.
- Ice Bath Time: Transfer eggs to an ice bath for 5 minutes.
- Prepare the Filling: Peel cooled eggs, halve them lengthwise, and scoop yolks into a bowl.
- Mix It Up: Add mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper; mix until smooth.
- Fold in the Bacon: Stir in most of the crumbled bacon (reserve some for garnish).
- Fill Those Whites: Spoon or pipe yolk mixture back into egg white halves.
- Garnish & Chill: Top with reserved bacon, smoked paprika, and chives; refrigerate for at least 30 minutes before serving.
