Ingredients

  • Salt and pepper to taste

Instructions

  1. Boil the cubed potatoes in salted water for about 12-15 minutes until fork-tender. Drain and let cool for 15 minutes.
  2. In a mixing bowl, combine mayonnaise and jerk seasoning. Let it sit while the potatoes cool.
  3. Once cooled, gently fold the potatoes, red onion, and parsley into the mayo mixture.
  4. Season with salt and pepper to taste. Cover and refrigerate for at least one hour before serving.
