- 2 green onions (roughly chopped)
- 1 chipotle pepper in adobo sauce
- 1 tbsp honey
- 1 inch knob of fresh ginger (peeled)
- 2 garlic cloves
- 2 tsp ground allspice
- 1/4 cup low-sodium soy sauce
- 2 tbsp olive oil
- Juice and zest of 1 lime
- 1.5 lbs chicken breasts
- 4 large plum tomatoes (diced)
- 1/4 red onion (chopped)
- 1/4 cup fresh cilantro (chopped)
- 1 jalapeño (seeded and chopped)
- 1/2 lime (juiced)
- 1/2 tsp kosher salt
- 1 garlic clove (minced)
Instructions
- Prepare Marinade: Blend green onions, chipotle pepper, honey, ginger, garlic, allspice, soy sauce, olive oil, lime juice in a food processor until smooth.
- Marinate Chicken: Place chicken in a Ziploc bag with marinade; seal tightly and mix well. Marinate for at least one hour or overnight for maximum flavor.
- Make Salsa: Combine diced tomatoes, red onion, cilantro, jalapeño, lime juice, kosher salt, and minced garlic in a bowl. Mix well and refrigerate.
- Cook Chicken: Preheat skillet or grill pan over medium-high heat; cook marinated chicken for about 5-6 minutes on each side until charred and internal temperature reaches 165°F.
- Serve: Let chicken rest briefly before slicing; serve with the prepared salsa.
