Instructions
- Sauté asparagus in butter over medium-high heat until crisp-tender; season with salt and pepper.
- Add minced garlic to the skillet and cook for an additional 30 seconds.
- Reduce heat to medium, create a space in the center, and crack the eggs over the asparagus. Cook until desired doneness.
- In another skillet, heat olive oil, sauté red onion until tender.
- Stir in white vinegar, crumbled turkey bacon, Swerve sugar substitute, and seasonings; warm through.
- Drizzle the warm dressing over the asparagus and eggs before serving.
