- 1 large head of cauliflower
- 2 large eggs
- 2 1/2 cups shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1/2 tsp garlic powder
- 1 tsp Italian seasoning
Instructions
- Preheat the oven to 425°F (220°C).
- Cut cauliflower into florets and pulse in a food processor until it resembles rice; steam until crisp-tender.
- Drain thoroughly to remove moisture.
- In a large bowl, mix the drained cauliflower with eggs, mozzarella, half of the Parmesan, almond flour, garlic powder, and Italian seasoning until well combined.
- Spread the mixture onto a parchment-lined baking sheet in a rectangular shape with even thickness.
- Sprinkle remaining Parmesan and more mozzarella on top.
- Bake for about 15 minutes until golden brown and cheese is melted.
- Let cool slightly before cutting into pieces.
