Ingredients
- 3 tbsp unsalted butter
- 10 ounces baby spinach leaves
- 1/2 medium onion, chopped
- 4 ounces mushrooms, sliced
- 2 tsp garlic, minced
- 2 ounces cream cheese
- 1/2 cup heavy whipping cream
- 1/2 cup mozzarella cheese
- 1/4 cup parmesan cheese
Instructions
- In a high-sided saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onions and sliced mushrooms; sauté until softened.
- In a separate skillet, melt the remaining tablespoon of butter over medium heat and cook the baby spinach until wilted. Squeeze out excess liquid.
- Cook the minced garlic with the onions and mushrooms for another 30 seconds.
- Stir in cream cheese until melted and blended, then add heavy whipping cream and stir until thickened.
- Mix in mozzarella and parmesan cheeses until melted into the sauce.
- Combine wilted spinach into the creamy mixture; serve warm.
