  • 2 cups Cottage Cheese
  • 8 oz Cream Cheese
  • 5.3 oz Greek Yogurt (Plain)
  • 1/3 cup Granular Sugar Substitute
  • 2 Eggs
  • Juice & zest of 2 Lemons
  • 2 tsp Vanilla Extract
  • 2 tsp Xanthan Gum

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, combine almond flour, sugar substitute, and salt. Add melted butter until crumbly.
  3. Press the mixture into a greased 9-inch pie shell or springform pan and bake for about 16 minutes until golden.
  4. Blend cottage cheese, Greek yogurt, and cream cheese until smooth. Add sugar substitute, vanilla extract, salt, lemon zest, and juice; blend again.
  5. Mix in eggs and xanthan gum until well combined.
  6. Pour the filling into the cooled crust and bake for approximately 50 minutes or until slightly jiggly in the center.
  7. Cool completely before garnishing with powdered sugar substitute.
