Ingredients
- 1 1/2 pounds boneless skinless chicken thighs
- 1/4 cup chopped green onions
- 1/4 cup Swerve brown sugar substitute
- 1 tbsp sugar-free honey
- 1/3 cup water
- 1/4 cup soy sauce
- 2 tsp ginger paste
- 2 tsp minced garlic
- 3 tsp rice vinegar
- 1/4 tsp xanthan gum
Instructions
- Prepare the marinade by combining the brown sugar substitute, sugar-free honey, water, soy sauce, ginger paste, minced garlic, rice vinegar, and xanthan gum in a saucepan over medium heat. Bring to a low boil while stirring occasionally until well mixed.
- Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
- Thread the chicken onto skewers and baste generously with the marinade.
- Grill the skewers for about 10-15 minutes, turning and basting frequently until cooked through.
