Instructions
- Marinate sliced chicken in soy sauce and sesame oil for at least 30 minutes.
- Heat a pan over medium heat and cook marinated chicken until fully cooked (6-8 minutes).
- In a bowl, mix gochujang, coconut milk or dairy-free cream alternative, and honey to create the sauce.
- Add mixed vegetables to the pan with chicken and stir-fry for 3-5 minutes.
- Serve warm rice in bowls topped with chicken-vegetable mix and drizzle with gochujang cream sauce.
- Garnish with green onions and sesame seeds before serving.
