Ingredients
- 8 oz linguine or angel hair pasta
- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- Zest of 1 large lemon
- Juice of 1 large lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente.
- Preheat your grill or grill pan over medium-high heat.
- Toss shrimp with olive oil, salt, and pepper; grill for 2-3 minutes on each side until pink.
- In a skillet, heat remaining olive oil; sauté garlic until fragrant.
- Add asparagus and cook until bright green and crisp-tender.
- Drain pasta (reserve some pasta water) and combine it with shrimp and asparagus in the skillet.
- Stir in lemon zest and juice; season with salt and pepper.
- Add reserved pasta water if needed for desired sauce consistency; serve garnished with parsley.
