- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 (8-ounce) package cream cheese, softened

- 2 large eggs
- 1 cup sour cream
- ¼ cup fresh lemon juice

Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a 9-inch springform pan.
- Bake the crust for about 10 minutes and let it cool completely.
- In another bowl, beat cream cheese and sugar until smooth, adding eggs one at a time.
- Fold in sour cream, lemon juice, lemon zest, vanilla extract, and baking powder until well combined.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 50-60 minutes until set around the edges but slightly jiggly in the center.
- Let it cool gradually at room temperature before refrigerating for at least four hours or overnight.
