Instructions
- In a large bowl, combine oats, peanut butter, maple syrup (or honey), melted coconut oil, lemon zest, lemon juice, vanilla extract, and salt.
- Mix until well combined; the mixture should hold together.
- Scoop out portions and shape into balls or flatten into cookie shapes.
- Place on parchment-lined sheets and refrigerate for at least 30 minutes to set.
