Instructions
- In a large bowl, whip together heavy whipping cream, vanilla extract, and powdered sugar using an electric mixer until stiff peaks form. Set aside.
- In another bowl, beat softened cream cheese and lemon curd until smooth.
- Gently fold the whipped cream into the lemon mixture until combined.
- Layer the mixture into individual jars, alternating between lemon fluff and smashed raspberries.
- Garnish with extra raspberries and mint leaves before storing in the fridge until ready to serve.
