- 1.5 lbs chicken thighs (cut into bite-sized pieces)
- 2 tbsp olive oil
- 5 ounces cream cheese (softened)
- 1 jalapeno pepper (chopped)
- 1 cup cheddar cheese (shredded)
- 2 tsp chili powder
- 1 tsp cumin
- 1/4 cup green onions (chopped)
Instructions
- Preheat your oven to 350 degrees.
- Heat olive oil in a skillet over medium-high heat. Add chicken pieces seasoned with salt and pepper; sauté until cooked through.
- Mix chili powder, cumin, and paprika; sprinkle over cooked chicken and stir to coat.
- In another bowl, combine cream cheese with chopped jalapeno; mix well.
- Fold in the cream cheese mixture into the chicken skillet until blended.
- Top with shredded cheddar cheese and bake for 15-20 minutes until melted.
- Garnish with green onions before serving.
