Ingredients
- 12 oz Can of Chicken (drained)
- 1/4 cup Chopped Celery
- 1/4 cup Finely Chopped Red Onion
- 1/3 cup Mayonnaise
- Juice from Half a Lemon
- 1/3 cup Chopped Strawberries
- 1/3 cup Chopped Blueberries
- Salt and Pepper (to taste)
- 1/3 cup Pecans
- 1/2 tbsp Butter
- 1 1/2 tbsp Granulated Swerve Sweetener
Instructions
- Prepare the candied pecans by melting butter in a pot over medium heat. Stir in granulated Swerve until caramelized, then mix in pecans. Spread on parchment paper to cool.
- In a large bowl, combine drained chicken, chopped celery, red onion, mayonnaise, and lemon juice. Season with salt and pepper.
- Gently fold in chopped strawberries and blueberries until evenly mixed.
- Serve topped with candied pecans for added crunch.
