Ingredients
- 5 oz Fresh spinach
- 1 15-oz can Mandarin oranges (drained)
- 1/2 cup Goat cheese (crumbled)
- 1/3 cup Walnuts (chopped)
- 1/3 cup Dried cranberries
- 1/3 cup Olive oil
- 2 tbsp Apple cider vinegar
- 1 1/2 tbsp Orange honey
- Sea salt and black pepper to taste
Instructions
- In a large bowl, layer fresh spinach as the base.
- Add mandarin oranges on top.
- Sprinkle crumbled goat cheese, chopped walnuts, and dried cranberries over the salad.
- In a separate bowl, whisk together olive oil, apple cider vinegar, orange honey, sea salt, and black pepper to create the vinaigrette.
- Drizzle vinaigrette over the salad and toss gently until well combined.
