- 2 cups old-fashioned rolled oats
- 1 cup milk
- 1/2 cup pure maple syrup
- 1/3 cup neutral oil
- 2/3 cup light brown sugar (packed)
- 2 large eggs (lightly beaten)
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- Sparkling or raw sugar (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
- In a large bowl, mix rolled oats and milk; let them soak for about 10 minutes.
- Stir in maple syrup, neutral oil, brown sugar, and beaten eggs until well combined.
- Add flour, baking powder, cinnamon, baking soda, and salt; mix until just combined.
- Divide the batter among muffin cups and sprinkle raw sugar on top if desired.
- Bake for 18-25 minutes or until a toothpick comes out clean.
- Cool in the tin for five minutes before transferring to a wire rack.
