Ingredients
- 1 medium cauliflower head (or 4 cups cauliflower florets)
- ½ cup sour cream
- 2 tablespoons unsalted butter
- 2 cloves garlic (minced, optional)
- Salt and pepper (to taste)
- Chopped chives (optional, for garnish)
Instructions
- Prepare the Cauliflower: Remove leaves and stem from the cauliflower head and cut into florets. Rinse under cool water.
- Steam the Cauliflower: In a large pot, bring about an inch of water to a boil. Place florets in a steamer basket, cover, and steam for 10–12 minutes until tender.
- Blend Together: Transfer steamed cauliflower to a bowl or food processor. Add sour cream, butter, minced garlic (if using), salt, and pepper. Blend until smooth.
- Season & Serve: Adjust seasonings as needed before serving hot, garnished with chives if desired.
