  • 1 cup Greek yogurt
  • 3 Tablespoons extra virgin olive oil (divided)
  • 4 garlic cloves
  • Juice of 1 lemon
  • 1 Tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano or thyme
  • Fresh cracked pepper
  • ½ medium yellow or white onion, chopped
  • 2 cups Basmati rice
  • 3 cups chicken broth
  • 1 large cucumber, chopped
  • 4 roma tomatoes or 2 large beefsteak tomatoes, chopped
  • ½ cup loosely packed mint or parsley, chopped
  • 4 slices naan or pita bread
  • 8 oz. hummus

Instructions

  1. Marinate the chicken: In a bowl, combine yogurt, olive oil, garlic, lemon juice, tomato paste, paprika, salt, oregano, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Cook the rice: Sauté chopped onions in olive oil until translucent. Add rice, toast lightly, then stir in chicken broth and salt. Bring to a boil and simmer until fluffy.
  3. Grill the chicken: Skewer and grill the marinated chicken until golden brown and cooked through.
  4. Assemble bowls: Layer rice at the bottom of each bowl, top with grilled skewers and fresh vegetables.
