Ingredients
- 2 cups grilled chicken, cooked and diced
- 1 roma tomato, diced
- 1/2 cucumber, diced
- 1/2 red onion, diced
- 1/2 cup apple vinegar vinaigrette
- 4 whole wheat pitas
- 1/2 cup plain Greek yogurt (for lime crema)
- Juice and zest of 1 lime
- Salt to taste
- Optional toppings: crumbled feta cheese, chopped cilantro
Instructions
- In a bowl, combine the grilled chicken, diced tomato, cucumber, red onion, and apple vinegar vinaigrette. Toss gently to mix well.
- In another bowl, whisk together Greek yogurt, lime juice and zest, and salt until smooth to create the lime crema.
- Lay out the whole wheat pitas on plates. Divide the chicken mixture evenly among them.
- Top with crumbled feta cheese (if using) and chopped cilantro. Drizzle generously with lime crema.
- Serve immediately while fresh!
