Ingredients
- 1 tablespoon garlic paste

- 6 skinless boneless chicken thighs
- 2 tablespoons olive oil
- 1 small yellow onion (finely diced)
- 2 cloves garlic (minced)
- 1 small lemon (thinly sliced)
- ¼ cup white grape juice
- 1 cup chicken broth
- 1 cup marinated olives
Instructions
- Prepare the marinade by mixing garlic paste, oregano, Italian seasoning, salt, and pepper in a bowl. Coat the chicken thighs evenly.
- Heat olive oil in a large skillet over medium heat. Sear the chicken for about 5–6 minutes on each side until golden brown.
- Remove chicken; sauté onions and minced garlic for about 3 minutes until softened.
- Add lemon slices and white grape juice; cook for another 3 minutes while scraping up browned bits.
- Pour in chicken broth and return chicken to the skillet. Bring to a boil, then reduce heat to simmer for about 5 minutes.
- Stir in olives and simmer together for an additional 10 minutes.
- Let rest before serving garnished with fresh herbs and alongside your favorite sides.
