- 4 whole wheat tortillas
- 1 cup fresh spinach, chopped
- ½ cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup thinly sliced red onion
- 1 clove minced garlic
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- Optional: ½ teaspoon red pepper flakes
Instructions
- Heat olive oil in a skillet over medium heat; sauté minced garlic until fragrant (about 30 seconds).
- Add chopped spinach and cook until wilted (2-3 minutes). Season with salt, pepper, and oregano; add red pepper flakes if desired.
- On one half of each tortilla, layer the spinach mixture, crumbled feta, mozzarella, and sliced onions.
- Fold tortillas in half and cook in a non-stick skillet over medium heat for 2-3 minutes per side until golden brown.
- Allow to cool slightly before slicing into wedges; serve warm.
