Ingredients
- 1 diced tomato
- 1/3 cup diced red onion
- 1 cup chopped spinach
- 1/2 cup feta cheese
- 1 cup shredded mozzarella cheese
- 3 burrito-style tortillas
Instructions
- In a bowl, combine diced tomato, red onion, spinach, feta cheese, and mozzarella cheese.
- Heat a non-stick skillet over medium heat.
- Place one tortilla in the skillet and spread about 1/3 of the filling mixture onto half of the tortilla.
- Fold the tortilla over to cover the filling and cook for 3-4 minutes until golden brown.
- Flip and cook the other side until crispy and cheese is melted.
- Repeat with remaining tortillas and filling.
