Ingredients
- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves
- 1 tbsp lemon juice
- 2 cups cooked grains (brown rice or quinoa)
- 1 cup cherry tomatoes
- 1 cucumber
- ½ red onion
- 1 cup roasted chickpeas (optional)
- 1 cup Greek yogurt (or coconut yogurt)
- Fresh herbs (parsley or dill)
Instructions
- Marinate the steak in olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper for at least 30 minutes.
- Prepare the tzatziki sauce by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Chill in the fridge.
- Whisk together vinaigrette ingredients: olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper.
- Sear the marinated steak on high heat for about 4–5 minutes per side; let it rest before slicing.
- Assemble your bowls starting with cooked grains as a base; add sliced steak and desired toppings; finish with tzatziki and vinaigrette.
