Ingredients
- 1 ½ cups blanched almond flour
- 2 Tbsp coconut flour
- ¼ tsp salt
- ¼ cup melted coconut oil
- 1 Tbsp maple syrup
- 1 tsp vanilla extract
- 1 cup coconut cream
- ½ cup unsweetened almond butter
- 4 oz dark chocolate chips
- ½ Tbsp peppermint flavoring
Instructions
- Prepare Your Pan: Line a 6" round springform pan with parchment paper.
- Make the Crust: Mix almond flour, coconut flour, and salt in a bowl. Stir in melted coconut oil, maple syrup, and vanilla until crumbly. Press into the bottom of the prepared pan.
- Create the Filling: Melt chocolate chips and coconut cream together over low heat until smooth. Remove from heat; stir in almond butter and peppermint flavoring.
- Chill to Set: Pour filling over crust and chill in the fridge for at least four hours or overnight.
- Add Finishing Touches: Decorate with shredded coconut or chocolate chips before serving.
