Ingredients

  • 1 cup butter
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Line an 8-inch square baking dish with parchment paper.
  2. In a saucepan over medium heat, melt the butter and brown sugar until smooth. Stir in vanilla extract and mix in rolled oats.
  3. Pour half of the oat mixture into the baking dish and press down firmly.
  4. In a separate bowl, melt chocolate chips and peanut butter together until smooth.
  5. Spread chocolate mixture over the base layer and reserve 1/4 cup for drizzling later.
  6. Pour remaining oat mixture on top and press down gently.
  7. Drizzle reserved chocolate on top and refrigerate for 2-3 hours until set.
