- 1 cup butter
- 1/2 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1 cup semisweet or dark chocolate chips
- 1/2 cup peanut butter
Instructions
- Line an 8-inch square baking dish with parchment paper.
- In a saucepan over medium heat, melt the butter and brown sugar until smooth. Stir in vanilla extract and mix in rolled oats.
- Pour half of the oat mixture into the baking dish and press down firmly.
- In a separate bowl, melt chocolate chips and peanut butter together until smooth.
- Spread chocolate mixture over the base layer and reserve 1/4 cup for drizzling later.
- Pour remaining oat mixture on top and press down gently.
- Drizzle reserved chocolate on top and refrigerate for 2-3 hours until set.
- Cut into bars once set.
