- 339g semi-sweet or milk chocolate, finely chopped
- 1.5 cups heavy cream
- 6 egg whites
- 300g granulated sugar
- 3/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 30–36 full-sheet graham crackers
Instructions
- Line an 8-inch square baking pan with parchment paper.
- Prepare the chocolate ganache by heating heavy cream until simmering, then pour over chopped chocolate and stir until smooth. Chill.
- For the meringue, whisk egg whites, sugar, and cream of tartar over simmering water until sugar dissolves. Add vanilla and whip until glossy peaks form.
- Spread a thin layer of meringue in the prepared pan, then layer graham crackers, followed by meringue and ganache—repeat for six layers total.
- Cover and chill overnight to meld flavors.
- Before serving, top with reserved meringue and torch lightly for a toasted finish.
