Ingredients
- 1 tbsp olive oil
- Kosher salt and ground pepper (to taste)
- 4 salmon fillets (skin removed)
- 2 garlic cloves (minced)
- 2 lemons (zested and juiced)
- 1/2 cup mascarpone
- 2–3 tbsp water (to thin the sauce)
- 1 tbsp fresh dill (minced)
Instructions
- Zest half of one lemon and juice three halves. Slice the remaining half into rounds.
- Heat olive oil in an oven-proof skillet over medium-high heat. Season salmon fillets with salt and pepper, then sear for 2-3 minutes on each side until golden brown.
- Remove salmon and lower the heat. Add minced garlic to the skillet and sauté for about 30 seconds.
- Stir in mascarpone, lemon zest, lemon juice, fresh dill, and water until well combined.
- Return salmon to the skillet, topping each fillet with lemon slices. Simmer for 4-6 minutes until cooked through.
