- ½ cup peach puree (fresh or canned)
- 1 cup unsalted butter, room temperature (for buttercream)
- 3–4 cups powdered sugar, sifted (for buttercream)
- 3–4 tablespoons peach puree (for buttercream)
- 1–2 tablespoons sparkling grape juice (for buttercream)
- Pinch of salt (for buttercream)
- Fresh peach slices for garnish
- Candied peach or cherry (optional)
- Sparkling sugar or granulated sugar for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- Cream butter and sugar in a separate bowl until light and fluffy.
- Beat in eggs one at a time, then mix in sparkling grape juice, milk, vanilla extract, and peach puree.
- Gradually combine dry ingredients with the wet mixture until just combined.
- Fill cupcake liners two-thirds full with batter and bake for 18–20 minutes.
- Allow to cool completely before frosting with peach buttercream made by creaming butter with powdered sugar and adding peach puree.
