  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare the peach filling by combining cubed peaches, granulated sugar, lemon juice, cornstarch, and water in a bowl. Set aside.
  2. In a separate bowl, mix warm water with bread flour to create tangzhong. In another bowl, combine remaining bread flour, sugar, instant yeast, and salt. Add milk, cream, egg, tangzhong mixture, and vanilla; knead until smooth.
  3. Let the dough rise in a warm spot until doubled in size (about 1 hour).
  4. Roll out the dough into a rectangle and spread softened butter over it. Layer on the peach filling and roll tightly into a log.
  5. Cut the log into 1-2 inch pieces and arrange them in a greased baking dish. Sprinkle crumb topping over the rolls.
  6. Allow to rise again for 30 minutes before baking at 350°F (175°C) for about 30 minutes until golden brown.
  7. Prepare the glaze by mixing room-temperature cream cheese with butter; gradually add powdered sugar and heavy cream.
  8. Drizzle glaze over warm rolls and serve.
