Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, ground cinnamon, and salt.
- In a large bowl, cream softened butter with granulated and brown sugars until fluffy. Beat in the egg and vanilla extract.
- Gradually mix dry ingredients into wet ingredients until just combined. Gently fold in diced peaches.
- For the streusel topping, combine oats, melted butter, flour, light brown sugar, and cinnamon until crumbly.
- Scoop dough onto a prepared baking sheet and top each cookie with streusel. Bake for about 13-15 minutes or until golden brown.
