  • Total Time: 25 minutes
  • Yield: Approximately 8 servings 1x

Ingredients

Scale
  • 6 medium potatoes (about 3 pounds)
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 4 hard-boiled eggs
  • 2 tablespoons white distilled vinegar
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons pickle relish
  • Salt and pepper to taste
  • 2 spring onions, sliced
  • 1 teaspoon paprika

Instructions

  1. Prepare the Potatoes: Scrub and peel the potatoes; cut them into one-inch cubes. Boil in a large pot of water for about 10 minutes until firm yet tender. Drain and let cool.
  2. Combine Ingredients: In a large bowl, mix the cooled potatoes with chopped onions and celery.
  3. Add Hard-Boiled Eggs: Boil eggs for about 10-12 minutes until hard-boiled. Let cool before peeling and chopping them into pieces. Fold them into the potato mixture.
  4. Dress It Up: Add vinegar, mayonnaise, mustard, pickle relish, salt, pepper, spring onions, and paprika to the bowl. Gently combine without mashing the potatoes.
  5. Chill & Serve: Cover and refrigerate for at least one hour before serving to allow flavors to meld.
