Ingredients
- 6 medium potatoes (about 3 pounds)
- 1 onion, chopped
- 1 celery stalk, chopped
- 4 hard-boiled eggs
- 2 tablespoons white distilled vinegar
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 2 tablespoons pickle relish
- Salt and pepper to taste
- 2 spring onions, sliced
- 1 teaspoon paprika
Instructions
- Prepare the Potatoes: Scrub and peel the potatoes; cut them into one-inch cubes. Boil in a large pot of water for about 10 minutes until firm yet tender. Drain and let cool.
- Combine Ingredients: In a large bowl, mix the cooled potatoes with chopped onions and celery.
- Add Hard-Boiled Eggs: Boil eggs for about 10-12 minutes until hard-boiled. Let cool before peeling and chopping them into pieces. Fold them into the potato mixture.
- Dress It Up: Add vinegar, mayonnaise, mustard, pickle relish, salt, pepper, spring onions, and paprika to the bowl. Gently combine without mashing the potatoes.
- Chill & Serve: Cover and refrigerate for at least one hour before serving to allow flavors to meld.
