- 1 1/2 cups graham cracker crumbs

- 3 medium apples, peeled and diced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup granulated sugar (for caramel)
- 6 tablespoons unsalted butter, cubed (for caramel)
- 1/2 cup heavy cream (for caramel)
- 1 teaspoon sea salt (for caramel)
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes.
- Beat softened cream cheese until smooth; add sugar, then eggs one at a time, mixing in vanilla and sour cream until just combined.
- Pour filling over crust; bake in a water bath for 55-65 minutes until slightly jiggly in center. Cool inside the oven for one hour.
- Sauté diced apples with butter, brown sugar, cinnamon, and nutmeg until softened.
- For salted caramel, melt granulated sugar until amber; whisk in butter and heavy cream before adding sea salt.
- After cooling overnight, top cheesecake with apple mixture and drizzle with salted caramel before serving.
