Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together unsalted butter and both sugars until light and fluffy.
- Mix in the egg yolk (or flax egg), vanilla extract, and maple extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop tablespoon-sized portions of dough, roll into balls, and roll each in granulated sugar before placing them on the prepared baking sheet.
- Bake for about 12 minutes or until golden around the edges but soft in the center.
- Allow cookies to cool slightly before transferring to a wire rack.
