- 1 tablespoon olive oil
- 1 sweet onion (diced)
- 2 garlic cloves (minced)
- 2 cups cooked chicken breast (shredded)
- 14 ounces black beans (one can, drained well)
- 2 tablespoons taco seasoning
- 2/3 cup Greek yogurt
- 6 corn or wheat tortillas (8 inches)
- 1/2 cup fresh cilantro (minced)
- 1 cup shredded cheese
- Thinly sliced lettuce
- Tomatoes
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté diced sweet onion for about 5 minutes until soft.
- Add minced garlic and shredded chicken to the skillet, stirring well.
- In a bowl, mash drained black beans and mix with taco seasoning. Add this mixture into the skillet and cook for an additional 3 minutes.
- Remove from heat and stir in Greek yogurt and chopped cilantro until evenly combined.
- In another pan, warm each tortilla until golden brown and crispy (1-2 minutes on each side).
- Assemble tacos by adding shredded cheese, followed by the chicken mixture, then top with lettuce and tomatoes.
