Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix milk, egg, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined—lumps are okay!
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown on both sides.
- Remove from heat and sprinkle generously with cinnamon sugar while warm.
- Serve immediately with preferred toppings like fresh fruit or whipped cream.
