- 1 box (13.25 oz) vanilla cake mix
- ⅓ cup neutral oil (vegetable, avocado, canola)
- 1 cup milk or water
- 4 large eggs
- ¼ cup unsalted butter (softened)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 12 oz candy melts
- Nonpareils or colorful sprinkles
Instructions
- Preheat oven to 325-350°F (162-175°C). Mix cake ingredients in a bowl and pour into a greased pan.
- Bake according to package instructions, checking for doneness with a toothpick.
- Let the cake cool before crumbling it into a mixing bowl.
- In a separate bowl, prepare buttercream by mixing softened butter with powdered sugar, vanilla, salt, and milk.
- Combine the buttercream with crumbled cake until well mixed.
- Form the mixture into balls (about 30g each) and chill for 15 minutes.
- Melt candy melts and dip one end of lollipop sticks before inserting them into chilled cake balls.
- Coat each pop in melted candy melts and decorate with sprinkles before setting upright until dry.
