Ingredients
- 1 lb. steak (sirloin or tenderloin), cut into bite-sized pieces
- 2 medium sweet potatoes, diced
- 1 bell pepper (red or yellow), sliced
- 1 bell pepper (green), sliced
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Toss diced sweet potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper in a bowl.
- Spread sweet potatoes on a baking sheet and roast for about 20 minutes until tender and golden brown.
- While sweet potatoes roast, heat remaining olive oil in a skillet over medium-high heat.
- Season the steak with onion powder, salt, and pepper before adding it to the skillet.
- Sear steak for about 3-4 minutes until browned; add sliced peppers last and sauté for an additional 2-3 minutes.
- Combine roasted sweet potatoes with steak and peppers in the skillet; stir well.
- Garnish with fresh parsley before serving.
