  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound chicken breasts to about ½ inch thickness.
  3. Set up three dredging stations: combine flour, salt, and spices in one; whisk eggs and water in another; mix breadcrumbs and Parmesan in the last.
  4. Coat chicken in flour mixture, dip in egg mixture, then cover with breadcrumb mixture.
  5. Heat oil in a skillet over medium heat and fry chicken until golden brown (4-5 minutes per side).
  6. Transfer to a baking sheet, top with mozzarella cheese, and bake for 8-10 minutes until bubbly.
