- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 large eggs
- 2 tablespoons water
- 1 cup grated Parmesan cheese
- 1 cup Italian-style breadcrumbs
- 1 cup panko breadcrumbs
- 1/2 cup vegetable oil
- 1/4 cup unsalted butter
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Pound chicken breasts to about ½ inch thickness.
- Set up three dredging stations: combine flour, salt, and spices in one; whisk eggs and water in another; mix breadcrumbs and Parmesan in the last.
- Coat chicken in flour mixture, dip in egg mixture, then cover with breadcrumb mixture.
- Heat oil in a skillet over medium heat and fry chicken until golden brown (4-5 minutes per side).
- Transfer to a baking sheet, top with mozzarella cheese, and bake for 8-10 minutes until bubbly.
- Drizzle with melted butter and garnish with parsley before serving.
