- 1 tbsp unsalted butter
- ¾ cup sugar
- 1 egg (or substitute with flaxseed mixture)
- ¾ tsp vanilla extract
- ½ cup buttermilk (or non-dairy alternative)
- ¾ cup cake flour
- ¾ cup all-purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 12–15 strawberries (about 1 cup pureed)
Instructions
- Preheat your oven to 400°F.
- Puree the strawberries in a food processor until chunky.
- In a bowl, cream together butter, sugar, and egg for about two minutes. Add vanilla, buttermilk, and strawberry puree; mix well.
- Gradually add both flours, baking soda, baking powder, and salt. Mix until just combined.
- Fill greased donut tins halfway with batter.
- Bake for 7-8 minutes until springs back when touched.
- Cool slightly before glazing with powdered sugar mixed with milk.
