- 10 tablespoons unsalted butter
- 1 cup old-fashioned oats
- 1 cup plus 2 tablespoons all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg or flaxseed meal mixed with water for vegan
- 1 teaspoon vanilla
- 1 tablespoon molasses or honey
- 1 cup powdered sugar
- 2 tablespoons freeze-dried strawberry powder
- 2 to 3 tablespoons whole milk
Instructions
- Preheat your oven to 350°F (175°C) and line cookie sheets with parchment paper.
- Brown the butter in a saucepan until golden and fragrant; allow it to cool.
- Pulse the oats until they are coarsely ground.
- In a bowl, whisk together flour, baking soda, cinnamon, and salt.
- Combine cooled butter with sugars and mix well before adding egg and molasses/honey.
- Fold in dry ingredients and oats until just combined.
- Chill dough for at least 3 hours or overnight.
- Scoop dough onto prepared sheets and bake for 10-11 minutes until edges are set.
- Cool completely before icing with a mixture of powdered sugar, freeze-dried strawberry powder, and milk.
