- 1.5 lbs ground hamburger (80/20)
- 6 flour taco-sized tortillas
- 5–6 ears of corn (husked and kernels removed)
- 3/4 cup mayonnaise
- 3/4 cup sour cream
- 1/2 cup pickled jalapenos
- 2 tablespoons juice from pickled jalapenos
- 1 heaping tablespoon dry ranch seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 tablespoon lime juice, fresh
- 1/3 cup sliced scallions
- 1 jalapeno, diced
- 1/2–1 tsp chili powder
- 1/2–1 tsp Tajin
- 1/4 tsp salt
- 2 tablespoons olive oil
Instructions
- Prepare the creamy jalapeno ranch sauce by mixing cilantro, pickled jalapenos, their juice, mayonnaise, sour cream, ranch seasoning, garlic powder, salt, and lime juice in a bowl.
- For the street corn mixture, combine fresh corn kernels with mayonnaise, minced garlic, lime juice and zest, scallions, minced cilantro, diced jalapeno (if using), chili powder, Tajin seasoning, salt, and olive oil.
- Form the smash burgers by dividing ground beef into six equal portions. Season with salt and pepper before flattening them on a hot griddle until crispy on the outside yet juicy inside.
- Warm flour tortillas on another skillet briefly until pliable. Assemble tacos by placing a smash burger on each tortilla followed by street corn mixture and drizzling with creamy ranch sauce.
- Serve immediately while warm.
