- 3/4 cup yellow cornmeal
- 1 cup flour
- 1/2 cup sugar
- 2 tablespoons honey
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 tablespoons melted butter
- 1/4 cup oil (canola, vegetable, or olive)
- 1 cup milk (whole or 2%)
- 1 large egg
- 1 large egg yolk
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish with parchment paper or non-stick spray.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, combine melted butter, oil, milk, honey, egg, and egg yolk. Add this mixture to the dry ingredients and stir until just combined.
- Let the batter rest for 5–10 minutes before pouring it into the prepared pan.
- Bake for 24–30 minutes until golden brown; a toothpick should come out clean when inserted in the center.
- Allow cooling for ten minutes before slicing and serving warm with butter or honey.
